Sauteed Collards

Ingredients

2 lbs collard greens, tough stems discarded, leaves chopped
2 tbsp medium onion, chopped
1 large garlic clove, minced
1 tbsp olive oil
Chili pepper flakes, a pinch
Salt, a couple of pinches

Directions

Use a large skillet with a tight-fitting cover. Heat olive oil on
medium heat. Sauté onion until transparent, a couple of minutes.
Add garlic and cook until fragrant, about 30 seconds.

Mix in the greens, chili pepper flakes, salt, and sugar. Cover and
cook until tender, 8-15 minutes. (Note that young collard greens
will cook up relatively quickly. Older greens may take upwards of
45 minutes to tenderize.)

Directions

Remove any damaged outer leaves from the cabbage and give it a good
rinse. Remove the core, then finely shred the leaves. Set the shredded
cabbage aside.

Add the cooking oil, ground beef, minced garlic, chili powder, cumin,
and a pinch of salt to a large skillet. Cook over medium heat, breaking
up the beef as you go until the beef is fully browned. If using a higher
fat content beef, drain the excess fat from the skillet.

Drain most of the liquid from the diced tomatoes, then add them to the
skillet along with the frozen corn kernels. Sauté over medium heat until
the corn is heated through and most of the liquid on the bottom of the
skillet has evaporated. Taste the mixture and add more salt as needed.

Add the shredded cabbage and sauté for just a couple minutes more, or
until the cabbage just becomes slightly wilted. Top with sliced green
onions and a drizzle of taco sauce or hot

cabbage. Stir to mix onions and garlic with the cabbage. Now
leave it alone and let the cabbage start to brown, but be careful
not to let it burn. Using a spatula, turn the cabbage over and let
the other side brown slightly. Season lightly with a dash of salt.

Add another ⅓ of the cabbage and 1 tablespoon of butter. Flip the
cabbage again after a couple of minutes.

Finish with the remaining cabbage and the last tablespoon of
butter. Once the cabbage is browned to your liking, add more
salt to taste and pepper, if desired. Remove from heat, and
season with red pepper flakes if desired. Serve and enjoy!
