Southwestern Burrito Bowl

 2 large sweet potatoes, peeled and cubed
 1 large onion, diced
 2 tbsp olive oil
 Salt
 ¼ tsp chili powder
 2 cups cooked brown rice
 1 can refried beans, drained and rinsed
 1 cup of corn
 1 tomato chopped

Preheat oven to 425 degrees.

On a large baking sheet, place sweet potatoes and onions. Toss
with oil, salt, and chili powder. Bake 23-25 minutes or until
sweet potatoes are soft.

Assemble burrito bowl. Fill each bowl with any or all of the
ingredients that you like!
