 1 ¼ lbs peeled potatoes, cut into cubes
 1 tsp paprika
 1 tsp garlic powder
 Salt and pepper
 2 ½ tbsp canola oil
 1 chopped onion
 1 chopped red bell pepper

Place potatoes in medium saucepan. Cover by an inch in cold
water. Bring to a boil and simmer for 2 minutes. Drain well, set
aside.
Combine paprika, garlic powder, salt, and pepper into a small
bowl. Heat a skillet over medium-high. Add 1 teaspoon of oil to
the pan. Add onion and bell pepper. Saute for 5 minutes or until
tender. Stir paprkia mixture into onion mixture and mix well.
Place in small bowl and keep warm.
Add two tablespoons of oil to skillet. Add potatoes and cook for 8
minutes. Stir in paprika mixture and onion mixture. Serve
immediately.
