Chili Roasted Broccoli

Yields1 ServingPrep Time30 minsCook Time20 minsTotal Time50 mins

 1 bunch of broccoli
 3 tbsp olive oil
 2 garlic cloves, minced
 2 tsp chili powder

1

Preheat oven to 400°F. Wash the broccoli and cut off the bottom
three inches of stalk, leaving 2-3 inches of stalk connected to
the florets. Slice the bunch vertically into “spears”. Arrange the
spears on a sheet pan.

2

Add the minced garlic, chili powder, and olive oil to the spears.
Using your hands, toss the broccoli spears in the mixture until
they are evenly coated. This can also be done in a bowl before
transferring it to the sheet pan. Make sure the broccoli spears
are spread out evenly on the pan.

3

Place the sheet pan in the oven and roast for approximately 20
minutes. Halfway through cooking, stir the spears. The broccoli
is done when it is slightly tender (check with a fork) but not so
soft that it is mushy.

Remove from oven and enjoy!
