Asian Cucumber Salad

 1 large cucumber
 ¼ cup soy sauce
 1 tsp toasted sesame oil
 2 tsp sugar
 ½ tsp freshly peeled and grated ginger
 1 tbsp rice vinegar
 Toasted sesame seeds

Evenly layer sliced cucumbers in an 8x8 pan.

Mix soy sauce, sesame oil, sugar, ginger, and vinegar. Pour over
cucumbers.

Cover and refrigerate for at least 2 hours before serving (stir
occasionally).

Serve with a sprinkle of toasted sesame seeds.
