Roasted Beets
Preheat oven to 425F
Prepare the beets: Wash the beets using a vegetable scrubber. Remove the stem and root end with a sharp knife. Using a vegetable peeler or paring knife, peel the beets. Slice into 1/4-inch thick rounds and place in a small bowl.
Drizzle olive oil over sliced beets. Toss to combine.
Place sliced beets into single layer on prepared backing sheet. Sprinkle with kosher salt.
Roast in oven until beets are fork tender (10-15 minutes).
